About Me

My name is Wendy and I will be your hostess of the Mindful Epicurean. I reside at the coast in North Carolina, where I share my world with my husband, Mike, and our two adorable (and a bit crazy) Jack Russell terriers, Rusty and Sophie. I love exploring new places, trying new foods, traveling, writing, discovering new music and most importantly, cooking!

I was inspired to create this blog in order to give myself a platform for my recipes after recently being diagnosed as a Type 1 Diabetic. The desire to continue enjoying food and cooking pushed me to seek new ways to create the inspirational dishes I have come to love over the years.

Whether you are trying to live a more wellness inspired lifestyle, manage your own diabetes or simply make delicious food, my hope is that these recipes will inspire, excite and delight your senses. I encourage you to be playful with your cooking and take chances. Feel free to add your own twists to the recipes featured in this blog and please share your ideas with me.
