This week is all about Inspiration since I am not doing a lot of cooking or creating. Today’s lunch, which I have already had this week and dreamt about for the last three months, is a Burrata dish. It is served over the most incredible lemon Thai basil pesto, which the basil I am going to try and grow this year, with pickled shiitake mushrooms. I am definitely recreating the mushrooms when I get home in collaboration with my friend at Island Caps. She grows mushrooms and they are a major notch above anything you could find in the grocery store.

Then there is the grilled flatbread, Josephine’s greens and togarashi dust. I’ll admit, I had no idea what togarashi dust was. I have since learned that it is a Japanese chili spice mix with other things like dried orange, ginger, sesame and it definitely has an umami component to it. It works so well with the flavor profiles of this dish. I am going to try and hunt some down at St. John Spice Shop before we leave.

And did I mention that is is AMAZING? And also, from Rum Hut? I told you that we come here nearly every day when we are on St. John. I was serious. Stop and don’t pass go if you visit here. You will not be disappointed.

Also, I got to spend lunch with this amazing beauty.
