Currently, we are in our Happy Place, St. John (USVI), and one of our absolute favorite lunch spots is Rum Hut. Actually, it’s probably our only lunch spot. We eat here almost every day. For so many reasons. The view is amazing. The staff is incredibleThe music is on point (shout out to Vanessa!). And the food is outstanding.

Today, I tried something new and it definitely makes the Inspiration List. It is a Creamy Sriracha Slaw that is served over their crispy fried chicken. The flavor profile is intense and seriously, it could go on anything. Pork, fish, in a bowl all by itself. It is THAT good.

My goal is to determine how to recreate it, even though I have unapologetically begged with kindness for the Chef to share his recipe with me. I have been told he is off Island, so I am still hopeful.

In the meantime, here are my notes and I will tweak it once I have tried to make it or even better, if I am fortunate enough to be given access to this amazing recipe! Pretty Please Chef!

Shredded Red and Napa Cabbage

Cilantro

Shredded Carrots

Pickled onion (It tastes like these had some chile or pepper profile to them)

Hand whipped mayonnaise

Sriracha

Calabrian chile (again, unsure if this is in there or not?)
